COD WITH GRAPES AND RAISINS
Wonderful fall recipe! Taste the sweetness of grapes and raisins with fish cooked in a delicate sauce! Very different for a change! Pair with a white wine from the Maconnais such as St- Veran or Pouilly-Fuisse. Enjoy!

Serving 4
2 lbs fresh cod (thick pieces)
24 pieces of seedless red grapes cut in half
4 tbsp golden raisins
2 tbsp butter
2 shallots, minced
¾ cup grape juice
¾ cup fish bouillon
½ tsp sugar
Salt and pepper
Fresh thyme for garnish
In a medium saucepan, on medium high heat, melt the butter. Add the shallots and sugar. Cook 3 minutes. Pour the grape juice and reduce by half. Add the fish bouillon and cook until the sauce is syrupy.
Add the grapes and raisins to the sauce. Season the preparation with salt and pepper. Simmer 20 minutes.
Preheat the oven to 430 F.
Season the cod with salt and pepper. Place the fish in a baking dish. Pour the sauce on top of it. Bake 10-12 minutes.
