STRAWBERRY TIRAMISU
If you think about the Dolce Vita, this is it! Imagine yourself being on a terrace in Italy! This tiramisu is absolutely irresistible! I always wanted to make this sumptuous dessert and finally I created it! I hope you will enjoy it as much as we did!
Preparation: 30 minutes; refrigerate 3 hours before serving
6 servings
8.8 oz. Italian mascarpone
4 large eggs
3 ¼ oz. of sugar + 2 vanilla sugar packages (2 x 0.32 oz.) + 3 tbsp. for strawberries
32 oz. strawberries (divided)
½ lemon juice
1 package (5 oz.) of Meyer lemon cookies (Moravian)
Preparation of the strawberries:
Rinse the strawberries under running water and place them on paper towels. Remove the green cap and stem with a paring knife.
Put half the strawberries (16 oz.) in the bowl of a blender. Add the lemon juice and 3 tbsp. of sugar. Mix to obtain a puree. You must have pieces of strawberries!
Cut the other 16 oz. of strawberries into pieces. Set aside.
Preparation of the tiramisu:
Separate the egg whites from the yolks and place them in the bowl of a stand mixer.
Put the egg yolks in a large bowl. Add the mascarpone and combine until smooth.
Whip the egg whites with 3 ¼ oz. of sugar and vanilla sugar until stiff.
Add the egg whites to the mascarpone and egg yolks. Combine all the ingredients.
Finishing of the dessert:
You will need 6 glasses.
Place 3 broken cookies in the bottom of each glass. Add 2 tbsp. of strawberry puree + 2 tbsp. of cut strawberries on top of the cookies.
Scoop some tiramisu preparation on top of the strawberries.
Add 3 more broken cookies into the glasses, cover with the puree and pieces of strawberries. Finish with the mascarpone.
Refrigerate 3 hours before serving. Garnish with fresh strawberries.
