RED SWISS CHARD OMELETTE

 

 

This delicious vegetarian recipe is unique to the Nice area and is perfect for an aperitif, picnic or dinner. It is called la Truchia! This simple recipe is easy to make and delightful! Try something new! Enjoy!

 

Serving 4

Preparation: 15 min; cooking time: 10-15 min.

 

1 bunch of red Swiss chard

½ onion

4 large eggs

2 ¾ oz freshly grated Parmesan

½ tbsp olive oil

Salt and pepper

 

Wash and dry the red Swiss chard. Peel the onion.

Put the leaves of the red Swiss chard and the onion in the bowl of a food processor and chop them.

Beat the eggs with the grated Parmesan. Add the red Swiss chard and the onion. Season the mixture with salt and pepper. Stir well to combine.

In a medium frying pan, heat the olive oil on medium-high heat. Add the preparation. Cook 5-7 minutes on each side. The omelet must be golden brown.

Dice the omelet and sprinkle some Fleur de Sel! Serve hot!
