POTATOES WITH TRUFFLES AND THYME

2 lbs small yellow Dutch potatoes
4 black truffles, sliced very thin
1 tbsp fresh thyme leaves
2 tbsp olive oil
Fleur de Sel (French sea salt)
Pepper
Preheat the oven to 400 F.
Wash and dry the potatoes. Slice them thin (about 2/10 of an inch thick).
Place the potatoes in a medium bowl. Add the olive oil, sliced truffles, thyme and season with fleur de sel and pepper. Combine.
Put the potatoes in a baking dish. Cover with aluminum foil. Bake 1 hour.
