POLENTA COOKED WITH ALMOND MILK

 

 

Love it, love it, and love it!!! This is the best polenta I ever tasted! The surprising flavor of this creamy polenta goes along with different kinds of meat or fish! Enjoy!

 

Preparation: 40 min; cooking time: 15 min.

4 servings

 

3 ½ oz almonds

2 cups of whole milk

4 sprigs of thyme

2 bay leaves

½ tsp pure almond extract

7 oz polenta

1 cup of water

 

Grind the almonds in a food processor. Put them in a medium bowl.

Bring the milk to a boil with the thyme and bay leaves.

Pour the milk over the almonds. Add the pure almond extract and stir.

Cover with aluminum foil and let stand 20 minutes.

Strain the liquid over a large saucepan.

Add 1 cup of water to the milk and bring the liquid to a gentle boil. Cook the polenta (according to the instructions you will find on the package) stirring constantly to obtain a smooth texture.

This polenta can be served with lamb, chicken, pork, veal and fish.
