MASHED CARROTS
We always think about mashed potatoes but mashed carrots is heavenly the way I prepare it! It is simple to make and will surprise your family or guests! Enjoy!
Preparation: 15 min; cooking time: 30 min.
Serving 4
2 lbs. carrots, peeled and sliced
2 tbsp. butter
3 tbsp. sour cream
Salt and pepper
Bring 4 cups of water to a boil.
Add the butter, salt and pepper.
Cook the carrots until tender about 30 minutes.
Blend the carrots in the bowl of a mixer. Add the sour cream. Combine.
Adjust seasoning if necessary.
Serve with your favorite fish or meat.
