FRENCH TOAST WITH GRILLED PEACHES AND TOASTED ALMONDS

12 slices of brioche (day-old) or Hawaiian bread

3.5 oz of unsalted butter

1 cup of milk

4 large eggs

3.5 oz of sugar for the bread and 2 ½ oz of sugar for the peaches

1 pack of vanilla sugar

Seeds from ¼ vanilla bean

6 yellow peaches

1 tsp almond extract

2.3 oz of sliced and toasted almonds

 

Preparation of the peaches:

Cut the peaches in half, remove their pit and cut them into ½ inches thick slices. Melt the butter in a large frying pan over medium-high heat, add the peaches, 2 ½ oz of sugar and vanilla extract. Cook for about 10-15 minutes, until the peaches become caramelized. Set aside.

In a small frying pan, toast the almonds until golden brown. Set aside.

 

Preparation of the French toasts:

In a medium sauce pan, bring the milk to a boil with the sugar, vanilla sugar and vanilla seeds.

Beat the eggs in a large bowl.

Pour the hot milk in another large bowl.

Melt the butter in a large frying pan. Soak the bread (one slice at a time) into the milk and then the eggs. Transfer the bread into the frying pan and cook until golden brown on both sides.

Serve the French toasts into plates covered with the caramelized peaches and toasted almonds.
