CORN PUDDING
This Southern pudding is a perfect complement to chicken or pork! It is also delicious by itself! Enjoy!
Preparation: 20 min; baking time: 1 h 15 min.
Serving 4
1 lb. sweet kernel corn
2 tbsp butter
1/3 cup flour
3 tbsp sugar
3 large eggs
½ cup whole milk
½ cup sour cream
1 cup half and half
Preheat the oven to 200 F.
Grease a soufflé dish with ½ tsp of butter. Put the corn in it and add the rest of the. butter cut into pieces on top of it.
In a large bowl, mix the flour and sugar.
Beat the eggs in a small bowl and add them to the flour and sugar, stirring until combined.
Add the milk, cream and half and half. Stir until you obtain a smooth consistency.
Pour the preparation over the corn.
Bake 15 minutes on the lower third of the oven. Take the pudding out of the oven and stir it.
Put it back in the oven and bake one hour or until it becomes golden brown.
