CAULIFLOWER SOUP WITH PEARS AND TURMERIC

 

 

What great combination! This creamy soup has so many flavors! You will love it! Pair with a Gewurztraminer from the French region of Alsace!

 

Preparation: 30 min; cooking time: 25 min.

Serving 4-6

 

1 ½ tbsp. olive oil

1 sweet onion, diced

3 Comice pears, peeled, cored and diced (reserve 1 pear finely diced for garnish)

1 big cauliflower, cut into florets

1 tsp. Turmeric

3 cups vegetable bouillon

1 can coconut milk, 13.5 oz. (400 ml)

1 tbsp. butter

Salt and pepper

 

Warm the olive oil in a medium stockpot on medium heat and add the onion. Cook 2 minutes until golden. Add 2 pears and turmeric and cook 3 minutes.

Add the cauliflower, vegetable bouillon and coconut milk. Season the preparation with salt and pepper. Bring the soup to a boil. Reduce the heat to medium-low, cover and simmer for 20 minutes.

Using an immersion blender, puree the soup until smooth.

Melt 1 tbsp. butter in a small frying pan on medium heat. Cook the pear 8-10 minutes until golden and caramelized.

Ladle the soup to plates. Garnish with the caramelized pears and Turmeric.
