CAULIFLOWER SOUP WITH PEARS AND SAFFRON
This soup will surprise you! It’s a wonderful combination of flavors! Perfect for cold nights… Select a wine from Alsace, such a Gewurztraminer to pair with this delicious soup.
1 cauliflower, greens and stem discarded, head broken up into small florets
4 cups of chicken stock
1 tbsp of olive oil
1 onion chopped
4 pears, peeled, split, cored and cut into small pieces
1 cup of heavy cream
2 tbsp of turmeric
1 tsp of saffron threads divided
Salt and pepper
Preparation of the soup:
Make the chicken stock and keep it warm.
In a medium soup pot, heat the olive oil and add the chopped onion, 1 tbsp of turmeric and ½ tsp of saffron threads. Cook 2 minutes over medium heat, stirring often. Add half of the pears and cook for 4-5 minutes, stirring often.
Add the cauliflower and the chicken stock and cook 25 minutes. Add the heavy cream and cook 5 more minutes.
Season with salt and pepper.
Puree the soup with an immersion blender until very smooth.
Preparation of the pears:
Place 2 pears diced with 2 tbsp of water in a medium pan. Turn the heat on medium. Add 1 tbsp of turmeric and ½ tsp of saffron. Season with salt and pepper.
Mix well, cover and cook 10 minutes on medium-low heat.
Ladle the soup into bowls and garnish with a tbsp of pears.
