SHRIMP SCAMPI

This delicious dish of shrimp served in garlic butter and white wine will satisfy your taste buds! The smell in your kitchen will be incredible! It is difficult to decide if the shrimp is better with bread or pasta! I love it both ways! Pair with a Pinot Gris from Alsace! Enjoy!

Preparation: 30 min; cooking time: 15 min.

Serving 4

2 lbs. shrimp, peeled and deveined

1 cup clam juice

1 cup white wine (I use Chardonnay)

5 tbsp. butter, softened

3 garlic cloves, minced

1 lemon, zest and juice

3 tbsp. Italian parsley, chopped

½ tbsp. fresh thyme leaves

Salt and pepper

Pour the clam juice and white wine in a baking dish and add the shrimp. Season with salt and pepper. Cover with foil and refrigerate 1 hour.

Meanwhile, combine, in a medium bowl, the butter with the lemon juice, zest, garlic, parsley and thyme. Season the preparation with salt and pepper.

Preheat the oven to 450 F.

Scoop the butter preparation over the shrimp.

Bake 12 minutes. Turn the broil on high and broil 3 minutes.

Serve the shrimp over fresh pasta or with croutons.

Bon Appetit!
