MADELEINES A L’ORANGE

 

French people love their Madeleines any time of the day! For best results, it’s very important for the batter to rest overnight. The next morning, you will savor these wonderful French pastries with your coffee or tea! Enjoy!

 

Active time: 20 min. cooking time: 10 min.

Makes 2 dozen

 

4 ¼ oz of unsalted butter + more for pan

6 ¼ oz of sugar

3 large eggs

1/3 cup + 1tbsp of milk

1 tsp of pure vanilla extract

Zest of 1 orange + juice of ½ orange

1 cup of all-purpose flour (8 ¾ oz)

2 ½ tsp of baking powder

 

THE DAY BEFORE:

Melt the butter in a small saucepan. In a medium bowl, beat the eggs and sugar; add the milk, the vanilla extract, the zest and orange juice.  Add the sifted flour mixed with the baking powder and stir well.  Add the melted butter continuing stirring.

 

THE NEXT DAY:

Preheat the oven to 475 F.

Butter the Madeleine pan. Pour the batter into the each mold.

Bake the Madeleines 5 minutes. Reduce the oven temperature to 350 F. and cook 6-7 more minutes or until they turn golden.
