ENDIVE SALAD

 

 

When I make this salad, it is always a success! This salad is crunchy, full of flavors and very different! It goes with almost everything! Taste it and you will make it over and over again!

 

Preparation: 10 min.
Serving 6
6 Belgian endives, sliced
2 Golden apples, peeled and diced
5 oz. blue cheese or Gorgonzola cheese, crumbled
4 oz. walnuts, halved
Salt and pepper
1 tbsp. Dijon mustard
1 tbsp. white Balsamic vinegar
3 tbsp. walnut oil

 

Wash thoroughly the endives and discard the first leaves if brown. Pat dry with paper towel. Slice the endives, thin.

 
In a medium bowl, prepare the vinaigrette. Start with salt, pepper and mustard. Add the vinegar and stir to combine. Add the walnut oil, very slowly, and stir constantly to obtain a smooth consistency.
Add the sliced endives to the bowl, followed by the diced apples, the crumbled blue cheese and the walnuts.

 
Toss to coat all the ingredients.
Serve at once.
