ZUCCHINI PANCAKES

 

 

You won’t believe how zucchini can be so tasty! This recipe is really impressive! These crispy pancakes will pair perfectly with lamb, pork, chicken or fish. They are also delicious on their own! Surprise your family and friends! Enjoy!

Serving 6

 

4 medium zucchini

3 large eggs

1 cup all purpose flour

¾ cup milk

3 garlic cloves, minced

2 tbsp parsley, chopped

2 tbsp olive oil

Salt and pepper

 

Place the zucchini in a large bowl. Cover with water and let stand 20 minutes to eliminate the sand. Drain, rinse and wash thoroughly. Dry with paper towel. Cut the ends of the zucchini and grate them.

In a large bowl, beat the eggs and add the flour and milk. Combine until smooth. Add the grated zucchini, garlic and parsley. Season the preparation with salt and pepper.

Preheat the oven to 350 F.

Heat some olive oil in a large frying pan on high heat. Make 4 pancakes with a spoon. Cook 3 minutes on each side. Place each pancake on parchment paper in a baking pan. Cook all the other pancakes the same way.

Place the baking pan in the oven and bake 10 minutes.

Serve with some crème fraiche and chives.

GREEN BEANS WITH ONION AND TOMATOES

 

 

This recipe reminds me of childhood! My mother makes this recipe during summertime after harvesting all the vegetables from the garden! It is easy to recreate with quality produces! Enjoy this wonderful dish with your favorite meat or fish!

 

Preparation: 20 min. cooking time: 20 min.

Serving 4

 

1 lb. green beans

4 big tomatoes

1 big sweet onion

Salt and pepper

1 tsp Herbes de Provence

1 tbsp olive oil

 

Wash thoroughly the green beans in cool water.  Break off the end (top and tail). Place them in the basket of a pressure cooker and steam them 6 minutes.

Bring some water to a boil in a large saucepan and cook the tomatoes 1 minute. Drain and rinse with cold water. Peel and seed the tomatoes. Dice them.

Peel and dice the onion.

In a sautéed pan, warm up the olive oil on medium-high heat and add the onion. Cook until pale gold (3 minutes) then add the diced tomatoes. Cook 10 minutes.

Add the steamed beans to the preparation and season with salt, pepper and herbes de Provence. Cook 5 minutes, stirring until well combined.
